Black garlic starts out as regular garlic and is put through a fermentation process that besides changing the color of the cloves to black, also mellows the flavor and reduces the sharpness associated with raw garlic. Our black garlic is described as having a rich fruity flavor likened to fig and balsamic reduction.

From a nutritional point of view, Black Garlic has a much higher content of allicin, the active ingredient in White Garlic that imparts its benefits, but without the odour. Additionally, Black Garlic is rich in amino acids and has almost double the amount of antioxidants when compared to White Garlic.
How to use it? The complex and delicious taste makes it very easy to use in cooking. Basically, you can use it the same way as roasted garlic.
The easiest is to serve a few cloves on the side to almost any meal, especially meat dishes. Make a puree of the black garlic cloves with oil. The puree makes the tastes more pronounced. Use the puree as a spread on bread or rub it onto meat before roasting. It can also be added in cream based sauces. When your pasta is boiled, just before serving, throw in a few cloves of black garlic. It makes simple pasta dishes look and taste really cool. When a dull dish is “missing something.” Just add a few cloves and suddenly it tastes amazing.
